About me

Hi, I'm Emma. I've always loved science, especially everything related to health. That's why I studied Human Nutrition and Dietetics at the University of Valladolid. Eventually I discovered that what I was really passionate about was the laboratory and everything to do with research and development of new products. That is why I continued my studies with a Master's degree in Novel Foods at the Autonomous University of Madrid. Right now I am doing my PhD in Food Science at the Functional Food Ingredients Research Group at the UAM, where we are working on the development of products with health benefits from plant sources, agri-food by-products... and even edible insects! All with a focus on circular economy and sustainability. I also collaborate in the practical teaching of subjects related to food.
Beyond the lab, I love to spend my free time connecting with nature. Hiking, discovering new landscapes and travelling to see different places is something that recharges my energy. I also love reading and spending quiet time watching series and films. And to balance body and mind, I practice aerial yoga, an activity that helps me to disconnect while staying active.
