I am a full professor at the Universidad Autónoma de Madrid (UAM), in the area of Food Sciences. Throughout my career I have worked in different research lines related to extraction and fractionation technologies in green chemistry, biotechnology, analytical techniques and bioactive lipids.

In my free time, I enjoy listening to music, watching great movies, and traveling to discover new places whenever I get the chance.
