About me

I have a degree in Biochemistry and a PhD in Food Science. I am currently an Assistant Professor at the Faculty of Veterinary Medicine at the University of Madrid (UCM). I research the biological properties of food byproducts to transform them into new, healthy ingredients. I am passionate about coffee (#CoffeeLover), exercising (I'm a ballet dancer), and spending time with my friends.
