About me
Laura Jaime de Pablo holds a PhD in Chemical Sciences and is a Professor at the Universidad Autónoma de Madrid, with a long teaching and research career of more than 20 years. Her field of research is the design of foods with healthy properties, studying the chemical composition, the biological activity of their bioactive ingredients, together with the modifications that these ingredients undergo during the process of digestion and colonic fermentation. The search for sources of bioactive ingredients has led her to work with diverse matrices such as micro and macroalgae, plants, and more recently edible and/or medicinal fungi. As for her hobbies, she enjoys nature, walking through it, and letting all her senses be immersed in it. Also, she likes to travel, read... In short: enjoy life!
