Fungi are eukaryotic organisms, capable of growing and colonizing a wide diversity of habitats. Some of these microorganisms contribute to degrading plant residues, and to do so they produce a large battery of enzymes. Studying the mechanisms involved in the degradation of plant biomass and the enzymatic system involved in this process are challenges that our group has been facing for years. This basic knowledge can be applied with the aim of degrading compounds that cause environmental problems, and also to reuse agro-industrial waste, reducing the environmental impact they generate and favoring their conversion into molecules of interest, such as alternative fuels and value-added products. In this workshop, simple experiments will be carried out to show how some of these enzymes act and their biotechnological applications.
