In this activity we will show the different methods and scientific disciplines we use to try to reconstruct the tastes and aromas of the wines consumed by our ancestors in Imperial Rome.
To reconstruct ancient viticultural and ethnographic practices we have a large number of tools that are assembled in an interdisciplinary way: Archaeology, Chemistry, History of Art, Industrial Engineering, Oenology, Ancient History, Epigraphy, Ethnography, Biology, Geology and Philology are combined to try to show us how the vineyard was cultivated and how ancient wines were made. Even what their aromas, flavours and qualities were. And we will talk about all this in this talk-workshop that will include the tasting of current wines that evoke the ancient Greco-Roman elaborations.
