Diana Martín García
About me
I am a Full Professor in the Food Science Section of the UAM, where I teach in degrees related to food science and technology, nutrition and novel food development. I do research at the Food Science Research Institute (CIAL, CSIC-UAM), and in recent years I have focused on the exciting world of edible insects: I explore how to transform them into healthy and sustainable ingredients, studying from their nutritional composition to how to improve their farming and processing with a circular economy approach. I am excited to be contributing, from science, to the birth of a new way of feeding us, more innovative, efficient and environmentally friendly.
In my free time, I love to immerse myself in good stories in books, movies and series, as well as enjoy long afternoons of board games with my family, and disconnecting walks.
