I am a Full Professor at the University of the Department of Nutrition and Food Science (1992). Graduate in Pharmacy (1979), and Doctor in Pharmacy (1983) from the Complutense University of Madrid. I have worked for all these years in different lines of research related to foods of plant origin (in the analysis of nutrient content, bioactive compounds, contaminants...) and with the food customs of different peoples and times. Since 2009 I belong to the research group: Alimnova
