Exclusive breastfeeding is recommended during the first six months of life. However, in occasions the mother might be unable or unwilling to breastfeed, thus breast milk must be substituted or supplemented. In these cases, children are fed infant formulas that are designed to mimic breast milk. The production process of the formulas can affect their quality. Therefore, it is necessary to investigate the impacts of the process on the quality properties of the final product, in order to obtain safe, acceptable and easy to prepare formulas, that adequately cover the nutritional requirements of the infants.
