Citric industry generates annually approximately 13.5 ton of peels and seeds. These are discarded as residue or are used for animal feeding, unknowing their high nutritional value compounds, mostly dietary fibre and antioxidant compounds. Its destination as “residue” is an environmental issue and costly to industry: its direct elimination would contaminate the soil and underground water. The revalorization of this by-product through sustainable extraction technologies for the obtention of food ingredients that have bioactive potential, is a sustainable strategy that adds value. It would economically benefit the companies, contributing to the national agroindustry development.
