Participants in this activity will learn concepts of healthy nutrition thanks to SIMGI, a Gastrointestinal Simulator that reproduces in vitro the digestion and metabolic processes that affect food in the human gastrointestinal tract. The research carried out at CIAL aims to meet the challenge of personalized or precision nutrition, that is, a diet for each individual based on their genetics, their characteristics and their needs in order to improve their health.
